NOTES
VINEYARD: Vines contributing to the Chablis are spread over 12 hectares in the heart of the appellation.
VINIFICATION: Grapes are brought rapidly to the winery where they are immediately pressed. In the harvesting bins, there is a chamber at the bottom to collect the juice and separate it from the harvest in order to avoid oxidation. Then, the harvesting bins are emptied on a conveyor belt which "feeds" one of the presses. The alcoholic fermentation and malolactic fermentation occur in stainless steel tanks. The wine stays on its fine lees for 8 to 12 months depending on the characteristics of each vintage. During this time, the lees are stirred regularly by pumping‑over without contact with air. Aged in stainless steel tanks as is typical for the appellation.
VINTAGE NOTES: Winter was mild with very few real days of frost so bud break started early. Spring weather was great with rainfall at the right time; flowering took place without any trouble. At the end of June, 80 mm of rain fell which was very positive for the soil reserves which stayed at sufficient levels to last the remainder of the season. Harvest began in early September (considered a very early vintage).
