VINEYARD: South, south-west exposure. Unilateral cordon pruning technique. Vines were planted in 1967 & 1970

VINIFICATION:  Grapes are destemmed and the must is gravity fed into tank, where fermentation takes place under controlled temperatures. The wine remains on the skins for 10-15 days, after which the wine is transferred into concrete vats, where malolactic fermentation takes place. The wine is aged in concrete for 12 months. unfined & unfiltered
