VINIFICATION:  Grapes are hand harvested, separated into small lots, destemmed and immediately pressed. The must is gravity fed into steel and cement tanks. Fermentation in temperature controlled (28-30°C) lasts about 25-28 days on the skins. After fermentation takes place, the wine is transferred to cement vats and oak barrels, where malolactic fermentation takes place. 50% of the wine is left to age in a combination of French oak and old barrels, while the remaining wine ages in cement tanks for about 12 months. The wine is blended into one tank and bottled after a few months. unfined & unfiltered
