Varietal
Sauvignon Blanc

Notes
VINEYARD: Exclusively located on land of at least 5% gradient slopes, the vineyards that produce Touraine-Chenonceaux grow on a clay-silica soil called “Perruche”, typical of the Cher Valley and ideal for water drainage and aeration of the roots. The South/South-West exposition is among the best that the Cher has to offer.

FARMING: Sustainable agriculture. Traditional methods such as controlled natural grass cover, ration use of vine treatments, debudding and green harvesting to control yields. Grapes are harvested at 3am to slow oxidization.

VINIFICATION: Grapes are gently pressed into gravity fed, temperature controlled tanks - where the juice settles between 24 - 72 hours before fermentation. Fermentation occurs by indigenous yeasts, and the wine is aged on the lees for 6-12 months before bottling
