Wind, Sand, and Stars Sparkling Gamay
VARIETAL
Gamay
NOTES
VINEYARD: Witters Vineyard. Planted in 2000 in soil composed of decomposing granite and volcanic clay-loam at 3,400’ - making this one of the highest altitude plantings in CA - above the small town of Camino. This site is cooled by its elevation and proximity to the American River that drains the western flank of the Sierra Nevada Mountains to the east. The soils in this region are very similar to the those found in the Beaujolais region of France where Gamay Noir thrives. Yields are held to moderate levels to allow full development of the grapes in these difficult growing conditions.
VINIFICATION: The grapes were harvested just below 20 brix. Direct-pressed, settled overnight, and fermented in stainless steel. The wine was then aged two months in barrel and six months in bottle before disgorging by hand in house. No part of the process is outsourced. No dosage added.
TASTING NOTES: Lime zest, white nectarine, plum, wet stone. Wind, Sand, and Stars is a memoir by French aviation pioneer and author of the children’s classic, “The Little Prince,” Antoine de Saint-Exupéry.
