NOTES
VINEYARD: Hawkeye Ranch in Redwood Valley. Dry-farmed and organic.
VINIFICATION: The grapes were harvested at 22 brix and fermented whole-cluster with no punchdowns or pump-overs for 7 days. The grapes were sealed in a container as they began to ferment. It was pressed to stainless steel at 10 brix where it finished fermentation. The wine was barreled down and aged on the lees for 6 months in barrel before bottling. Minimum effective SO2 added.
As with all the wines made by Josh, this is named it after one of his favorite films: Seijun Suzuki's Youth of the Beast. A boldly stylized Japanese gangster flick from the mid-1960s that’s flashy and unpredictable.
