NOTES
VINEYARD: Campo dei Montagnoli, a south-facing vineyard planted on clay soil at 140 meters asl. All vineyard cultivation, from working the soil to pruning and weed control are strictly organic, and have been since Gregorio founded his winery in 1998.

VINIFICATION: Following the manual harvest, the grapes are transported in small cases to the cellar where they are pressed with no de-stemming. Native ferment for a prolonged period of 20-25 days in stainless steel. Certified organic.

TASTING NOTES: Fresh aromas of strawberries and cherries, with floral hints of violet and cyclamen. Chiù gets its name from the nocturnal birdsong of the Chiurlo, a bird native to Maremma. On spring nights, Gregorio hears the call of “chiù” coming from the pine trees in front of his cellar while he is bottling the wine.
