NOTES
VINEYARD: From the original vineyard planted by Silvia and Giuseppe in 2005.
VINIFICATION: Harvested later than what is considered "normal" in order to ensure ripeness of all three varietals. Spontaneous fermentation for all three varietals - all of which are vinified separately at controlled temperature following 20 days of maceration with daily punchdowns. The Sangiovese and Montepulciano are transferred to combination acacia barrel and cement, while the Lacrima is placed in barrique. After about 6 months, the wine is assembled and spends about 6 months in bottle before release.
