NOTES
VINEYARD: This Pinot Noir is 100% estate grown and handpicked. It is from a single block at the very top of Illahe's hill that they consider to be the best block of Pinot Noir in their vineyard. The Fords named this block after their Percheron draft horses. The soil is sedimentary clay and the elevation is 250-450ft asl.
VINIFICATION: Fermentation is 100% native yeast. Grapes are left to macerate on the skins for 24 days, after which they are pressed in a wood basket. This wine is aged for 19 months in barrel with 50% new French oak barrels and 50% neutral French oak barrels. LIVE-certified and salmon safe.
TASTING NOTES: Aromas of cherry, cedar chest, orange blossom, cinnamon stick, and currant, with a palate of strawberry, bramble, marzipan and bacon fat which finishes with velvety soft tannins.
