NOTES
VINEYARD: Comprised of shallow sedimentary clay between elevations of 250-450ft. Clones used are 777, Pommard, 115, 828, and Wadenswil.

VINIFICATION: Grapes were all grown sustainably and hand-harvested. Twenty-five percent of grapes were whole-cluster, fermentation was 100% native yeast. Following maceration on the skins for 24 days, the pomace was then scooped into the wood basket press by hand. Wine was barrel-aged for 10 months in 10% new French oak barrels. LIVE-certified grapes and Salmon-safe.
