NOTES

VINEYARD: Fifty to seventy year old vines planted in granitic soil. Certified organic (ECOCERT), and in biodynamic conversion.

VINIFICATION: Grapes are chilled for one day, then pressed into tank for carbonic maceration/fermentation lasting 12-14 days with indigenous yeasts. Aged 5-6 months in tank, no fining, and no filtration (except the last 10% of the tank).
