NOTES

VINEYARD: 50+ year old vines growing in clay-dominant soils with blue stones on granite bedrock. Certified organic (ECOCERT), and in biodynamic conversion.

VINIFICATION: Vinified in tank, with semi-carbonic maceration/indigenous yeast fermentation over 3 weeks. Aged 6-8 months in used tonneaux. Then assembled in tank for one month prior to bottling. No fining/filtration.
