VINEYARD: David Girard Vineyard in the Sierra Foothills, certified organically farmed. Grayson Hartley farms this vineyard of decomposed igneous rock in the Sierra Foothills, and the vineyard is now certified organic. Keep get as much Counoise from this vineyard that they can get, a whopping 1.5 tons.

VINIFICATION: Made in the traditional carbonic method, 14 days of enzymatic fermentation and then a light foot tread to finish fermentation. This wine has no added S02 and was aged in neutral oak for 6 months before bottling. Native yeast fermentation, unfined/ unfiltered.
