Notes
VINEYARD: Soils of garrigue, clay-limestone, stony, and deep, allowing for excellent rooting, and a good resistance to drought.
VINIFICATION: Manual harvest. Long maceration of one month - fermentation with indigenous yeasts. Aging in barrels for 2/3 of the wine; the remaining third in stainless steel, all over the course of 12 months. Bottled under neutral gas and with little SO2.
