Notes
VINEYARD: Garrigue soils, mainly calcareous soils with clay veins. Mediterranean climate: hot and dry, with the Mistral wind to dry the vines after rainy periods.
VINIFICATION: Manual harvest. Soft pressing, 50% vinified in new barrels (Damy soft heat) and 50% in stainless steel tanks. Spontaneous fermentation with native yeast under temperature control (for the part vinified in tanks). Regular stirring of the lees. Bottling under neutral gas and with little SO2.
