Varietal
Petit Meslier - a cross of Gouais Blanc and Savagnin. This forgotten grape was co-planted in the Les 7 parcel, and in an effort to preserve the diversity of Champagne, Aurelien decided to release this limited bottling of an ancestral varietal. Petit Meslier has shown the ability to maintain acidity in ever-higher temperatures.
Notes
VINEYARD: From the Les 7 parcel behind the winery, young vines planted in 2014 and 2018 on clay/silt soils overlying a chalky subsoil. A blend of several vintages, with 40% reserve wine.
VINIFICATION: Hand-harvested then grapes gravity-fed to a traditional press. Alcoholic and malolactic fermentations taking place in barrel with some battonage. Aged on the lees for 6 months. Disgorged by hand. Dosage 2 G/L
