Chianti Classico

VARIETALS
100% Sangiovese

NOTES
FARMING: Certified Organic

SOIL: Schist (galestro)

VINEYARD: Located in Panzano, the farm consists of 30 hectares total, ten of which are vineyards, with the rest mainly for the cultivation of olive trees. The vineyards are at an altitude of between 430 and 500 meters. The main exposure is East South-East. The "pietraforte" is the rocky massif on which the vineyards lie.

VINIFICATION:  After de-stemming they are delicately crushed and collected in cement vats. Fermentation occurs spontaneously through indigenous yeasts. After fermentation the wine is racked and transferred to other vats for MLF.
Aging takes place in traditional French oak barrels of medium capacity (20 Hl) where the wine remains for about 12 months, then continues for another 12 months in cement tanks before being bottled.
