FARMING: Certified Organic
SOIL: Schist (galestro) clay-limestone over sandstone
VINEYARD: Located in Panzano, the farm consists of 30 hectares total, ten of which are vineyards, with the rest mainly for the cultivation of olive trees. The vineyards are at an altitude of between 430 and 500 meters. The main exposure is East South-East.
VINIFICATION: Grapes are specially harvested at the right degree of ripeness in order to obtain finesse and balance without excessive alcohol content. The de-stemmed grapes stay briefly in the press for a slight maceration. The must is then vinified as a white wine would be, at a controlled temperature in stainless steel.
