VINEYARD: All of the domaine's vines are situated in Savigny-les-Beaune. Louis and his family mainly produce the Premiers Crus “Aux Clous”, “Les Hauts-Jarrons”, “Les Lavières” and “Les Talmettes” wines, but also a rare white Savigny-les-Beaune Village wine.
VINIFICATION: The harvest is done by hand and takes approximately a week. The winemaking process is traditional: the grapes are de-stemmed, crushed, cold-macerated for a few days then trodden down on a daily basis. The process of fermentation is carried out naturally at low temperatures. After a period of 2 weeks in vats, the wines are brought to the cellar and aged over 18 months. Whenever possible, the red wines are not filtered.
PRESS/REVIEWS: Bottled in July 2020, the 2019 Bourgogne Rouge sees very little oak. It has a well-defined bouquet of raspberry and briary aromas. The palate is medium-bodied with sappy red fruit, fine depth and commendable delineation toward the lively finish. Everything you could wish for in a Bourgogne Rouge.
