VINEYARD: 15-20 year old estate vines El Cuento at 415m and Cuatroencias at 550m
VINIFICATION: Partial carbonic maceration with whole cluster (stem included). Beginning of fermentation is intracellular, temperature-controlled at 24°C, then 8 days maceration with the skins.
