NOTES
VINEYARD: he bulk of these grapes came from a special protected site on the west shore of Cayuga Lake. The site was planted in 1973 on Cazenovia silt loam soils. The vines are own rooted and grown with a minimum of sprays and lots of straw mulch added to the vine rows. Sustainable.

VINIFICATION: Hand harvested grapes are transferred whole cluster to red fermenters for carbonic maceration, then basket pressed and transferred to tank at the finish of fermentation. Cabernet Franc juice is added immediately before bottling. Bottled under crown cap to preserve natural carbonation.
