NOTES
VINEYARD: A .30ha site with south/southwest exposure, vines planted on clay limestone sandy soil.

VINIFICATION: Manual harvest in mid-October. Macerated for 20 days in temperature-controlled tanks. Remains in tank for 4 months then transferred to 5Hl Allier for 18-20 months. Rests for at least 6 months in bottle before being released.
