Summary
Filipa, the daughter of legendary Bairrada producer Luis Pato began by producing wines in the larger appellation of Beiras (and the Dão). Eventually, it is assumed, she will reunite with her father’s estate, but, in the meantime, she has carved a big international name for herself for her strikingly expressive and honest wines.
For the past several years, Filipa has been collaborating with her husband William Wouters, and the two have been improving their vineyard sites and wines ever since. The philosophy is simple: to create authentic wines without make-up, that express the true nature of the vineyards from which they come.
The couple produce wines from indigenous grapes such as Baga, Bical, Arinto, Cercial and Maria Gomes and are actively purchasing old small plot vineyards in Bairrada and converting all farming methods to biodymanic viticultural practices. Together Filipa & William share all their experiences: the love for food and wine, encounters with great wine growers, sommeliers and wine lovers from all over the world and the magical, inexhaustible culture of the World of wine.
