SOIL: Clay and Chaulk

VINEYARD: Limestone mid-slopes with eastern orientation and a very intense Atlantic influence (only 15 km from the ocean). Mainly young vineyards from the old centenary vineyards of Baga.

VINIFICATION: After harvesting, the grapes are de-stemmed and fermented on the skins for 2 months in underground 300L clay amphorae - which allows for gentle micro-oxygenation, and a "hands off" approach (vis a vis extraction - it undergoes a long fermentation on the skins)
