VINEYARD: The San Gervasio vineyard extends over an area of 2.5 hectares in the commune of Teglio at 750 meters asl. After four years of experimentation, Sandro Fay decided to grow grapes that are suitable for partial drying (appassimento in Italian) in this high-altitude vineyard. The resulting wine is Sforzato Ronco del Picchio, whose name refers to a small wooded area behind the vineyard.
VINIFICATION: Grapes are picked in the first week of October and are left in small boxes and placed in a room open to air circulation until December. Alcoholic fermentation is done in stainless steel tank for 20 days with maceration of 10 days. Malolactic fermentation and aging for 12 months in a combination of 25Hl and 500L oak barrels.
