VINEYARD: Demeter-certified Stella Crinita vineyard planted in 2003 at 3600ft asl. Loam, sand, clay soil
VINIFICATION: Hand-harvested. Native yeast ferment for 21 days in concrete eggs and stainless steel tank. Fourteen months in 50% concrete egg and 50% 2nd use oak barrel.
