FARMING: Biodynamic
SOIL: Slate and Quartz
VINEYARD: 16 hectares of vineyards in Lieser on the Moselle, specifically the Schlossberg Vineyard. Steep slopes - 40-60% grade incline.
VINIFICATION: The grapes are harvested without botrytis with sugar readings of 85° - 95° Oechsle in the second week of October. They are then crushed and de-stemmed into an open vat. Here they skin ferment and macerate for 6 weeks. After pressing, the orange wine is aged in old 1000L foudre barrels for another 6 months. It is then bottled with no prior filtration and no sulfur additon at any stage of the process.
