VINEYARD: Windmill Vineyard, certified organic. One hundred acres co-planted with a variety of production (organic fruits and trees) for a healthy, bio-diverse environment, on alluvial, gravelly soils. While this region has a hot climate, it enjoys a 40º diurnal shift allowing for an August harvest at low brix with great acidity, flavor, and depth.
VINIFICATION: The grapes were de-stemmed and crushed to maximize skin contact, and remained on the skins 2-4 hours. They were then pressed directly to fermentation vessels without settling and remained on the heavy lees for 5 months.
Primary fermentation occurred naturally with indigenous yeast and malolactic, with 50% in stainless steel barrels for freshness, and 50% in neutral barrels for texture and complexity. Total elevage was 6 months, then the wine was racked twice then the two barrels blended for March bottling, with no fining, filtration, or additions other than a small amount of SO2 (20ppm).
TASTING NOTES: Mouthwatering acidity, nice weight and texture belying the low 11.5% alcohol. Layered with green apple, citrus, it's highly enjoyable with or without food. Hard not to finish the bottle!
