NOTES
FARMING: non-certified organic.
SOILS: A mix of volcanic “tufo,” mineral-rich and well-draining, with limestone subsoils.
VINEYARD: Estate vineyards sit at 2,100 feet above sea level near the commune of Pietradefusi, some of the highest, and coolest, Coda di Volpe vineyards in the region.
VINIFICATION: Hand-harvested. Full-cluster press; fermented on indigenous yeasts in temperature-controlled tanks. Aged in tank on fine lees. Coda di Volpe is a white grape native to Campania, and its name means “tail of the fox.” Grape bunches resemble the thick, bushy tail of a fox. Raffaele Troisi was the first to bottle a single-variety Coda di Volpe.
TASTING NOTES: This wine is remarkable age worthy. Aromas of honey, wet stone and herbs. Lively and juicy, with a resinous, honeyed finish. Pair with fresh oysters or other shellfish; ricotta-filled ravioli
