VINEYARD: Ver Sacrum vineyard (in Los Chacayes): Marsanne and Syrah (planted in 2011). San Martín (in Alto Verde): Grenache (planted in 2004). The Ver Sacrum vineyard sits at 3600ft asl and is planted on limestone soil with large river stones. The San Martín vineyard sits at 2300ft asl and is planted on sandy soil.
VINIFICATION: 100% de-stemmed. Marsanne and Grenache are co-fermented (15 days) with about 6 hours of skin contact during the press cycle. Syrah is direct press and juice is fermented (20 days). 80% in concrete vat 3 months; 20% in 5+ year old French barrel. Lightly filtered before bottling.
