VINEYARD: The vineyards are Villaescusa, El Robledillo, El Mojón, and El Presidente which range from 890m to 920m in altitude and are comprised of slate and granite soils. Bush-trained vines are 60 years-old and organically-farmed.
VINIFICATION: After a manual harvest, the wine was spontaneously fermented by native yeasts and aged six months in 500L French oak barrels of various origins and ages. It then spent a further six months in stainless steel tanks before bottling.
2018 was a slightly colder year than average, with a fairly cool spring and a mild summer. Spring rains refreshed the typically dry region, which contributed to slower, gentle ripening. This resulted in more color, softer tannins, good acidity, and a great balance. 2018 is definitely one of the best vintages of the last 10 years in Cebreros. September 13 marked the beginning of the harvest.
