VINEYARD: The Côteaux du Giennois is a small appellation just north of Pouilly Fumé on the way to Auxerre, producing tiny quantities of wine across its 200 hectares of clay-limestone terrain. The soil is comprised of 80% clay with flint and 20% clay-limestone (Marnes Kimmeridgian). The average age of the vines is 20 years old.

VINIFICATION: Organically-farmed grapes. The domaine is committed to natural farming methods: no pesticides are used, only biological agents. Cover crops, organic fertilization, and severe de-budding are practiced. Native yeast fermentation in temperature-controlled stainless-steel tank. Aged for 3 months in stainless steel tank on its lees.
