NOTES
VINEYARD: The grapes for the sparkling wines are harvested from different locations in Bairrada. Chalky clay mid-slopes with eastern orientation and a very intense Atlantic influence. Undergoing organic/biodynamic conversion.
VINIFICATION: The grapes are harvested by hand in August to maintain freshness and fruit, and pressed very gently. After fermentation in tank with wild yeast the second fermentation occurs in bottle - classical method. There is no dosage, so the wine remains dry.
TASTING NOTES: Very mineral nose with a certain smokiness due to the limestone soil. Noticeable fruit of pears and fennel. After some time in the glass it even reveals thyme and honey. The mouth is refined, creamy, and has noticeable minerality. The middle palate is fruit-driven and the finish is dry and refreshing.
