SOIL: Sandstone and sand

VINEYARD: Non-irrigated, high biodiversity vineyards, with minimal defensive treatments for cultivation.

VINIFICATION:  Grapes are hand-harvested, and spontaneously fermented. Maceration lasts between 10-12 days with manual pumping over. Wine is left to age for 6 months in new oak barrels, and another 6 months in 400L used oak casks.
