SOIL: Sandstone and sand

VINEYARD: Non-irrigated, high biodiversity vineyards, with minimal defensive treatments for cultivation. Grapes are grown on bush-trained old vines.

VINIFICATION:  Grapes are hand-harvested into 15kg boxes. The boxes of grapes are unloaded directly into the de-stemmer to limit the formation of must and contact with oxygen. The berries are separated from the stems, chilled immediately and softly pressed. Fermentation is temperature controlled t 16° C. At no point are sulfites added.
